Help with figuring out what done to my RV

So, it is clear that there was once a Xantrex in my Jayco Seneca unit
(the remote is still in the control center and you can see where it used
to be mounted under the bed. Now, there is an 80 amp charging unit that
I assume replaced the Xantrax. The problem is that, with the unit
installed, I lost the inverter. The guy I had out today talked about
spending $2,800 - a new combination charger inverter, new control panel,
lots of work. I can't believe it's that hard since it had an inverter
originally.

It depends on whether the previous owner removed/cut all the inverter wiring to and from the breaker panel.

The Jayco,s that I have helped with had 80 amp converter and separate inverter. You may only need a inverter to restore to original. Checkout Donrowe.com. Good prices on good inverters.

The break panel is in the side of the bed, right there. All the wiring is there.

Thanks, that's useful. So there should be a large cable with 12v power to feed the inverter and a smaller Romex to feed some part of the 110 system? What outlets would have been powered from the inverter?

The TV and Microwave is powered by the inverter in my Seneca.
